Fireworks Chipotle Tomato Grilled Corn

Chipotle Tomato Lime and Cotija Cheese Butter 

  • 1 stick butter softened
  • 2 tablespoons chipotle chiles in adobo
  • 2 tablespoons fresh basil or cilantro chopped
  • 1 lime juiced
  • 1/4 teaspoon pepper
  • 1/4 teaspoon salt
  • 1/2 cup catija cheese
  • 1 Fireworks Chipotle Tomato butter burst
  • 6 ears corn
  • 1 tablespoon olive oil

Instructions 

  1. Heat up the grill to its highest temperature.
  2. Take off the husk from each ear of corn. Apply a light coating of olive oil and sprinkle with salt and pepper.
  3. Next Envelop the corn in a single layer of aluminum foil. Cook on the grill for approximately 5 minutes per side, rotating the corn three times throughout the grilling process.
  4. Once the corn has been on the grill for about 20 to 25 minutes, I suggest removing the foil and letting the corn continue cooking on the grill for an additional 5 to 6 minutes. This enhances the corn's delightful smoky grilled flavor and leaves behind appealing charred marks if desired.
  5. Take the corn off the grill and allow it to cool for 3 minutes.
  6. Then generously spread the chipotle tomato lime and cotija cheese butter over the corn. To make the butter, combine all the ingredients mixed together and gently rub the corn with the butter to create an exceptional side dish for any meal.
