Fireworks Chipotle Tomato Butter Pork Posole

When you have a bunch of leftover pork, this is a super-fast easy recipe for a weeknight. I love how the butter here cuts down on so much prep time, and ingredient shopping and chopping. This is a 6 ingredient or less recipe adapted from Martha Stewart's Fresh Flavor Fast.

Ingredients:

1 Fireworks Chipotle Tomato Butter Burst
2 14.5 oz cans hominy
1 lb chopped cooked pork
4 cups chicken broth
1 can diced tomatoes with juice
Salt and Pepper

 

Preparation:

In a large pot, heat the butter to melting, add the chopped pork and season with salt and pepper, about 1 tsp and 1/2 tsp respectively, stir well. Add broth, tomatoes, hominy and stir well. Bring to a boil, reduce heat to simmer. Simmer for about 10 minutes. Ladle into soup bowls and garnish with radish slices, green onion, loose-packed cilantro leaves, sliced avocado, grated jack cheese, lime quarters. Sizzle. Spread. Boom.
