Fireworks Basil Pesto Burgers

  • 2 lbs freshly ground beef (80% lean), shaped into 5, 4-inch wide patties
  • Kosher salt and black pepper
  • Oil for cooking
  • 1 romaine lettuce heart, quartered lengthwise
  • 12 cloves of Garlic Confit
  • 2 Fireworks Basil Pesto Butter Burst, sliced into disks
  • 5 brioche buns, split and toasted



  1. Season the patties with salt and pepper. Cook them on a grill or in a lightly oiled cast iron skillet until desired doneness (125°F for medium-rare, 135°F for medium). Let them rest for 5 minutes.

  2. Heat a skillet and add oil. Once hot, place the romaine lettuce quarters, cut side down, and cook until lightly charred. Flip and char the other side. Transfer to a work surface.

  3. Remove most of the core from each romaine quarter, leaving the charred leaves intact.

  4.  Spread garlic confit on the bottom half of each toasted bun. Add the charred romaine leaves. Place a cooked patty on top and add a disk of Fireworks Basil Pesto Butter.

  5.  Close the burgers with the top half of the buns. Serve immediately to savor the flavors while the patties are warm and the butter is melting.
