Crispy Fireworks Chipotle Tomato Wings with (Vegan) Old Bay Ranch (serves 4-6) Appetizer portions

I was inspired by my sister and brother in laws wings they served me a few weeks ago. They have a Big Green Egg and love to smoke a lot of their meats, especially their wings. I didn’t get a recipe, but I thought I could recreate them using my butters. Man, oh man, these were outrageously good. To start, I called my trusty Savory Spice Shop in Boulder for some recommendations for what to do to recreate the smokey flavor. We don’t have a smoker, but I know that you can buy smoke seasonings. So, Amber, at the Boulder Savory Spice Shop suggested I try the Alderwood Smoked Sea Salt. She was right. We hit the jack pot…Now we may have to host a Superbowl party to test amongst our friends. They are super simple to make. Believe it or not the ranch dip took longer to pull together, but, oh is it worth it. I mean, what’s not to like… Old Bay, Chipotle Tomato Butter. YUM!

Wings:

2lbs Organic Party Wings

¼ c canola oil

2 tsp Alderwood Smoked Sea Salt

½ tsp Chipotle Powder (Morita)

30 twists of fresh ground pepper

¼ c Fireworks Chipotle Butter (melted)

 

Vegan Old Bay Ranch Dressing:

8 oz silken tofu

2 tbs fresh lemon juice

½ c veganaise

1 tsp chopped garlic

1 Tbs finely chopped chives

 

Tools you’ll need:

Tongs

Sheet Pan

Cooling rack

Blender

Spatula

Whisk

Mixing Bowl

Serving dishes

Basting Brush

  

For the wings: Heat oven to 400˚. Position rack to the middle. Using a large mixing bowl toss the oil with the salt, pepper, chipotle powder and stir well. Add the chicken wings and toss with a tongs to coat. Get the sheet pan and line it with foil to prevent a mess. Put the cooling rack on top of the pan and lay wings across in a few rows. You should be able to fit 2 lbs of wings on one pan. Put on the middle rack and bake for 15 minutes. Then, take out and turn and bake for another 15 minutes. They should be nice and crispy when they come out. Have the chipotle tomato butter melted and ready to baste when they come out.

For the Ranch:

Use a high power blender and add all the ingredients except the chives and blend for 1 minute on medium high. Stop and scrape down the sides and blend for another 30 seconds. Pour into a serving bowl and garnish with chives.
